2 tsp Canola oil 1 Onion, chopped 1 Bell pepper, chopped 2 Garlic cloves, minced 1 pound Frozen hash browns, thawed 1/2 tsp Salt 1/2 tsp Black pepper 4 ounces Ham, diced 5 slices Cheese (American, cheddar, or your favorite)
Heat oil in a large skillet over medium heat.
Add onion and cook 5–7 minutes until softened.
Stir in bell pepper and garlic; cook 3–5 minutes until fragrant.
Add hash browns, salt, pepper, and ham. Cook 18–20 minutes, stirring occasionally, until potatoes are golden brown.
Top with cheese slices and let melt. Stir into hash brown mixture before serving.
