Sausage Cheese Balls

Hello Friends! Today I’m sharing an easy, three-ingredient recipe that’s a staple in our home — Sausage Cheese Balls. These little bites are a perfect addition to a Saturday brunch spread or a go-to option for busy weeknights when you need something quick and filling.

At our house, Tuesday night is breakfast night — a family tradition that makes the most of what we have on hand. It’s one of the ways we stretch our resources while still enjoying warm, homemade meals together. My husband’s favorite? Sausage cheese balls or biscuits and sausage gravy. And I have to say, no one in the family complains when that’s what’s on the table.

This recipe is simple, adaptable, and truly a homestead favorite. You’ll find the printable version below!

Equipment

  • Mixing bowl
  • Baking sheet
  • Silicone baking mat or aluminum foil Optional
  • Paper towels For draining
  • Oven

Ingredients

  • 1 pound Ground breakfast sausage
  • 1 cup Shredded cheddar cheese Or other shredded cheese, excluding mozzarella
  • 2/3 cup Flour Gluten-free or all-purpose

Instructions

  • Preheat and mix. Preheat oven to 350°F. In a large mixing bowl, combine the uncooked sausage, shredded cheese, and flour. Mix thoroughly — using your hands works best to ensure everything is well incorporated.
  • Roll into balls. Form 1-inch balls using clean, slightly damp hands to reduce sticking. You should get about two dozen.
  • Bake. Place the sausage cheese balls on a baking sheet about 1 inch apart. Use a silicone baking mat or foil to prevent sticking and add crispiness. Bake for 25–30 minutes, or until golden brown.
  • Drain and serve. Transfer to a paper towel–lined plate to soak up any extra grease. Serve warm and enjoy!

Notes

  • Cheese choice: Most shredded cheeses will work well in this recipe. We’ve used cheddar, Mexican blend, and Colby Jack with great results. Avoid mozzarella — it doesn’t hold the mixture together as well.
  • Flour options: We use King Arthur Measure for Measure Gluten-Free Flour, but regular all-purpose flour works just fine if you’re not avoiding gluten.
  • Helpful tip for rolling: Slightly damp hands make it much easier to roll the mixture into balls without sticking. Just rinse your hands briefly before shaping.
  • Make-ahead friendly: These freeze well! After forming the balls (before baking), place them on a tray in the freezer until solid, then transfer to a zip-top bag. Bake from frozen, adding a few extra minutes to the cook time.
  • Great for gatherings: This recipe makes about two dozen sausage cheese balls. If you’re feeding a crowd, feel free to double the batch!

How We Serve Them

In our home, sausage cheese balls are usually part of breakfast night and are served warm right out of the oven — sometimes with a side of scrambled eggs, fruit, pancakes or even tucked into biscuit sandwiches. They’re also great as grab-and-go snacks on busy days. If you’re hosting guests, consider adding a dipping sauce like honey mustard or maple butter to make them feel a little fancy (without the fuss).

We love making use of what we have, and this recipe is one more reason to be grateful for a good harvest. If you’re looking for more ways to enjoy homegrown goodness, be sure to explore our recipes page for more homemade favorites.
