Hello Friends! I have another delicious dessert recipe for you today. I have adapted a classic chocolate chip cookie recipe to make a homemade cookie cake. Our family uses this recipe often as it’s less time and clean up than making individual cookies. And, we also use this cookie cake recipe for birthdays adding a rich chocolate fudge icing to the cake and decorating it with candles 😊

Here are the ingredients you will need to make the cookie cake.

Cookie Cake Ingredients:
2 ¼ cups flour (our family uses King Arthur Measure for Measure Gluten-Free Flour)
1 teaspoon baking soda
1 teaspoon salt
1 cup softened butter
¾ cup sugar
¾ cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
1 cup chocolate chips
1 cup chopped walnuts (optional)
Directions:
Preheat oven to 350 degrees F.
In a large mixing bowl, blend eggs, sugar, brown sugar, vanilla, and softened butter until creamy.
In a separate bowl combine flour, baking soda, and salt.
Add flour mixture to wet ingredients in the large mixing bowl. Stir until well blended.
Stir in chocolate chips and chopped walnuts.

Once everything is combine, spread the cookie dough into a greased 9×13 baking pan and bake for 20-25min or until golden brown.

Finally, cool the cookie cake completely in pan before decorating or slicing.
As shown below, we use a rich chocolate fudge icing for special occasions. This cake was made for a family members birthday party. the cake was sliced and served with homemade vanilla ice cream.

But for a typical Tuesday after school snack, the cookie cake is delicious without icing and could be cut up into cookie bars and served with milk.
