  • 1 tbsp Fresh basil, sliced thinly, for garnish

Instructions

  • Preheat oven to 450°F. Line a baking sheet with parchment paper.
  • Slice sweetpotatoes into 1/4-inch rounds and arrange them in a single layer on the baking sheet.
  • Lightly spray both sides with oil and sprinkle with seasoned salt.
  • Bake for 10 minutes, flip, and bake another 10 minutes, until tender and lightly golden.
  • In a small bowl, mix goat cheese and 1 tablespoon honey until creamy and smooth.
  • Spread a small amount of goat cheese mixture onto each roasted sweetpotato round.
  • Top with pecans and cranberries, then drizzle with remaining honey.
  • Garnish with fresh basil and serve warm or at room temperature.
