Green Beans with Olive Butter: A Simple and Savory Side Dish

Hello, friends!

When it comes to seasonal meals on the homestead, simple sides made with fresh ingredients are always a win in our kitchen. This recipe for Green Beans with Olive Butter is one of our go-to dishes when the green beans are coming in strong from the garden—or when I score a good deal at the farmer’s market!

The buttery blend of California black olives, garlic, and shallots gives this humble veggie a big flavor boost. It’s quick enough for a weeknight dinner and elegant enough for a holiday spread. My kids love it, and I love how fast it comes together (especially when I prep the olive butter in advance and keep it in the fridge for a few days).

Whether you’re feeding a crowd or just looking for a new way to serve up green beans, I hope this becomes one of your family’s favorite sides too.

Let’s get cooking!

Equipment

  • Food processor
  • Large stockpot
  • Skillet
  • Mixing bowl (ice bath)
  • Strainer or colander

Ingredients

  • 1/4 cup (1/2 stick) Unsalted butter, softened
  • 20 California Black Ripe Olives, chopped
  • 2 Shallots, chopped
  • 2 Cloves garlic, chopped
  • 4 quarts Plus 1/4 cup, water, divided
  • 1 tbsp Salt, plus additional to taste
  • 2 lbs Green beans, trimmed
  • Freshly ground black pepper, to taste

Instructions

  • In a food processor, pulse together the butter, olives, shallots, and garlic until well blended. Set aside.
  • In a large saucepan or stockpot, bring 4 quarts of water and 1 tablespoon of salt to a boil.
  • Add green beans and boil for 3–5 minutes, until they are tender-crisp and still bright green. Work in batches if needed.
  • Drain the beans and immediately plunge them into a bowl of ice water to stop the cooking process.
  • In a large skillet over medium heat, add the remaining 1/4 cup water. Add the blanched green beans and toss gently until heated through.
  • Add the olive butter mixture and toss to coat the beans evenly.
  • Season to taste with additional salt and freshly ground black pepper.
  • Transfer to a serving platter and serve warm.

Notes

Recipe Notes:
You can prep the olive butter ahead of time and store it in the fridge for up to 3 days. It also pairs beautifully with roasted carrots or steamed potatoes!

Try It with a Homestead Twist

If you’ve got herbs growing in the garden, this dish is even better with a sprinkle of fresh thyme or parsley stirred in right before serving. And if you’ve got extra garlic or shallots stored from a recent harvest, use those! That’s the beauty of homestead cooking—it’s all about using what’s fresh, what’s simple, and what’s on hand.

I’ve even added a touch of lemon zest or a splash of vinegar for brightness when I want to change it up. There’s no wrong way to serve this—just make it your own and enjoy the process.

A Little Bit Fancy, A Whole Lot of Simple

Green Beans with Olive Butter is the kind of recipe that reminds me why I love homesteading: simple ingredients, prepared with love, shared around the table. It’s a side dish that feels a little bit special without being fussy—just how I like it.

Whether you’re cooking for a weeknight dinner or a holiday gathering, it’s one of those recipes that lets the ingredients shine. I hope it inspires you to try something new with what you already have in your pantry or garden.

Because the heart of homestead cooking is this: using what you have, making it with love, and gathering your people around the table to enjoy it.
